ENNDOUMAME SU-PU
-----Green Pea Soup with Soft-boiled eggs

<Ingredients (for four)>
4 eggs
300g shelled green peas
120g white onion
200g potato
2 1/2 cups water
1 cup milk
1/2 teaspoon salt
pepper
30g butter

1) In a saucepan over medium heat, melt the butter and
saute the onion.
When translucent, add the potatoes and the green peas
and stir. Add water
and cook for about 7 to 8 minutes, or until the potatoes
are soft and tender.
2) In a saucepan full of water add the eggs and let it
come a quick boil.
Reduce the heat to low, and let it cook for four minutes
in a liquid that is
just under a boil. Then remove from heat. Place the
eggs in warm water and
remover the shell.
3) Pass the soup made in step one, through a food processor.
Return the
pureed soup to the pan and place over low heat. Then
add the milk to make
the soup thinner. Bring to a simmer and adjust taste
with salt and pepper.
Ladle the soup into individual bowls and add the soft-boiled
eggs.
*For thinly sliced potatoes
that are to be sauteed immediately afterwards,
there is no need to wash the potatoes beforehand. It
is good to wash the
surface of the discolored slices which were not cooked
immediately.
However, there is no need to soak them in water before
cooking.
